Reducing Food Waste for a Healthier Planet

Globally, one-third of all food produced is thrown away. Food and Nutrition Services is committed to reducing food waste in our kitchens. To support that commitment, we implemented processes to track and monitor all waste, whether from overproduction, trimming, or spoiled or expired products. These processes may be facilitated through Leanpath, which uses automated tracking or manual processes at smaller hospitals. Helping the kitchen staff understand what is tossed away and the reasons why promotes positive behavior changes, resulting in a more efficient kitchen operation and 2-8% reduction in food costs. Preventing and reducing food waste is our commitment to a healthier planet.
